About 6 months ago, I went to my doctor to discuss my lab results. To my surprise, she told me my food allergy test came back positive for an allergy to wheat. I’ve been gluten free ever since. About 2 months ago, I decided to try my hand at gluten free cake pops. To my surprise again, they were absolutely DELICIOUS! I’ve had people tell me they like them BETTER than the regular cake pops. I don’t know about that, but they sure are good.
This one reminds me of cotton candy for some reason. The cake is yellow cake with a gluten free vanilla icing mix-in. I dipped them in pink and sprinkled them with a summer time sprinkle mix. For fun, I drizzled some pink on the sides.
For my third surprise, I got my first order yesterday for gluten free cake pops! A customer called to order cake pops for her son’s first birthday. I asked her if she had ever tasted a cake pop. She said she had not because she has celiac disease. When I told her I make gluten free cake pops (on designated equipment), she was delighted and ordered a 1/2 dozen!
